Summer brings to us an array of colourful fruits and veggies. An easy fruit salad can be very fulfilling and delicious for summers! Fresh fruits and vegetables are full of essential nutrients and help you to stay fit within minimum calories. You can have this salad as your evening snack and ditch those fries and oily snacks. A bowl of delicious salad is easy to digest and is light on the tummy, perfect for hot summers!

All the ingredients needed for this salad is easily available or can be bought from your nearby store. You may add or replace the fruits and veggies according to your likings! What all do you need –
1. Apple(1) – Chopped into pieces
2. Cucumber (1)- Chopped into pieces
3. Tomato (1)- Cut into pieces
4. Watermelon(1cup) – Cut into pieces
5. Curd – 1 cup
6. Honey – 2 Tsp
7. Sea salt – 1/2 Tsp
8. Chaat masala ( Indian mix of spices) – 1tsp
9. Red Chilly Powder- A pinch
10. Lemon juice – 1 Tsp
11. Chia seeds: 2tsp (Optional)
1. Whisk the curd in a big bowl and mix all the spices.
2. Add the chopped vegetables, and top it with the tomatoes cut into rings.
3. Garnish with a drizzle of honey and some chia seeds.
4. Sprinkle a pinch of red chilly powder and drizzle a teaspoon of lemon juice for that extra tangy and spicy taste.

Watermelon Cooler | Shake It Make It

Watermelon is an ideal fruit for summer. It has high percentage of water in it and is rich in several vitamins and nutrients. Watermelon can keep you full for long hours without worrying about calories. It is one of the healthiest fruit. What do you need – (For 2 glass)
Diced watermelon – 4 cups
Honey – 2 tsp
Rock salt – 1/4 tsp
Few ice cubes/1cup chilled water
Red Chilly powder – A pinch ( optional)
Mint leaves – For garnishing
2 watermelon slices – For garnishing

Let’s shake it :
In a mixer jar, add the watermelon chunks and blend it till it’s liquidy. Add the ice cubes, honey, rock salt, pinch of red chilly and blend everything well. Pour the drink in glasses. Top it with some mint leaves if available and put a slice of watermelon each on the edge of glasses to make it look even more tempting.

Pohela Baisakh or Bengali New Year is celebrated on the first day of Baisakh, according to the lunisolar calendar. On this same day people in North India celebrate Bihu and Vaisakhi and people in South Indian states celebrate Vishu and Puthandu.
Pohela Baisakh is celebrated by Bengalis in Bangladesh and West Bengal mainly, and is a big day for Bengalis.
Pohela Baisakh, is celebrated with some detectable mouth-watering Bengali dishes in almost every household in Bengal. It calls for a day full of good food and family get togethers. There is a tradition of wearing new clothes on Poila Boisakh, as this day is a symbol of new beginning. As the month of Chaitra ends and Baisakh arrives, it is thought that there is a scope of new beginning. Thus Pohela Baisakh has got a significant part too, the old is left behind and a new beginning awaits. All the sadness, impurity, darkness is enlightened with the hope of light on this day.
Pohela Boisakh is thus celebrated with all the delicious Bengali dishes which are a proud part of the traditional cuisine of Bengal.

Authentic Bengali Chicken Curry

This year’s Pohela Boisakh is Sunday, that means all of us will have a gala time this year! Pohela Boisakh calls for a sumptuous lunch with all our favourite Bengali dishes. To make it easy for you all and decide your menu, I have come up with a lipsmaking Chicken dish. Prepare it for lunch and make your Pohela Boisakh a grand one!
This amazing Chicken recipe will surely give your taste buds a burst of flavours. It’s not oversized and is light on tummy! Have an amazing Poila Boisakh. Let’s get back to our recipe straightaway!

What all do you need –
Chicken – 1 Kg
Chopped onion – 250 gm
Garlic paste – 2 tsp
Ginger paste – 3 tsp
Turmeric powder – 1tsp
Curd – 100 gm
Chopped tomato(big) – 2
Dried melon seeds paste (Char Magaz) – 2tsp
Poppy Seeds paste (Posto) – 3tsp
Red Chilly – 2 whole
Red Chilly powder – 2tsp
Mace powder – 1 small pinch
Nutmeg powder – 1 small pinch
Bay leaves – 2
Salt and Sugar – As per taste
Ghee – 1tsp
Mustard oil – 6-7 TSP
Water – 500ml

Recipe :
1. Heat 3 tsp oil in a pan and lightly fry the pre washed chicken. Take it out of the pan when it turns slightly golden.
2. In a fresh pan, add 4 tsp oil and 1tsp oil. Add 2 whole red chillies and 2 bay leaves. Add the chopped onion and 2 tsp of sugar, let it turn golden. As it turns golden, add the ginger and garlic paste. Fry the masala till it is cooked.
3. Add 2 chopped tomatoes and let it mix well will all the other masalas. Cover the pan and let the tomatoes be cooked for 2-3 minutes.
4. At this stage, whisk the curd till no lumps remain, add it in the pan. Add the paste of poppy seeds, melon seeds and red chilly powder.
5. As all the spices are almost cooked, add the Chicken. Mix it with all the cooked spices and season it with salt as per your taste. Add water(500ml) for the gravy. Add less water if you want less gravy.
6. Cover the pan and let it simmer for at least 10-15 mins.
7. Just before removing it from heat, add 1 pinch each of nutmeg and mace for that extra flavour.
Your dish is ready to be served. You may add some garnish it with some fresh cream or serve it as it is. Whatever garnishing you do, it will not disappoint you and your family with the taste.

Mouth Watering Veg Burger Recipe

Pohela Boisakh is just around the corner. Pohela Boisakh is celebrated on the first day of the month of  Baisakh and is a big day full of food of celebrations for the Bengalis. We bengalis love food and all our festivals are full of good food and lots of sweets to give a complete satisfaction to your tummy.
Bengali Cuisine is full of mouth watering dishes to savour into. But let’s make an unconventional breakfast dish for your Pohela Boisakh to make it more interesting.
You all have tasted burgers with cheese and Italian seasonings. But let’s make an Indian style burger, with Indian chutney and spices! I know that’s already making you all raise a brow with confusion. I guarantee that it will be as tasty as the burgers you have tasted and will be much more healthier.
What all do we need –
Burger Buns – 2
Boiled Potato – 2
Medium sized carrot – 2
Boiled Green peas – 1/2 cup
Coriander leaves – 1 bunch
Cucumber – 1
Capsicum – 1
Tomato – 1
Onion – 1
Green chilly – 2
Ginger paste – 1 tsp
Garlic – 1 tsp
Cumin powder – 1tsp
Coriander powder – 1tsp
Red Chilly powder – 1/2 tsp
Roasted cornflakes – 1 cup
Chickpea flour ( Besan) – 4-5 tsp
Lemon juice – 2 tsp
Tomato Sauce – 4-5 tsp
Butter – 2 tsp
Oil – 2-3 tsp
Salt and Sugar – As per taste
For making the patties :
1. Mash the boiled potatoes and carrots.
2. Add – cumin powder, coriander powder, ginger paste, 1 tsp ginger paste, 1tsp garlic paste, few sprigs of chopped coriander, salt and sugar into the mashed veggies and mix well.
3. Add salt and sugar as per taste. To bring a tangy taste add 2 tsp tomato sauce and 1tsp lemon juice.
4. To bind the mixture add the besan, crush the roasted cornflakes add it to shape the mixture into patties.
5. Lightly brown the patties on a pan, with 1 tsp oil on each side. There’s no need to deep fry.
6. On the same pan, heat a tsp of oil. Cut the capsicums into rings and lightly give them a toss.
7. Cut the cucumber, tomato and onion in rings.
8. Lightly toasted the burger buns with 1/2 tsp butter on each side.
Make the chutney –
Add 1tsp garlic paste, a bunch of coriander, 2 green chillies and lemon juice in a mixer jar. Blend it completely and add salt as per taste.
Assemble :
1. Apply the prepared chutney on one side of the burger buns. You may slather another side of the burger with tomato sauce or any flavoured mayo.
2. Place the patties on the burger, place the ringed veggies ( cucumber, tomato, capsicum, onion) on top of it.
3. Season the veggies with some salt.
4. Slather some tomato sauce and chutney on top of it.
5. Place the upper part of the bun and stick it with a toothpick.
6. Your drool worthy burger is ready.
This burger is utterly delicious and healthy. It has minimalistic ingredients and saves your time. You can definitely try it for an awesome start to your Pohela Boisakh instead of your Luchi – Tarkari. It will you ample time to prepare your awesome Bengali lunch and keep your tummy happy!
Make it in your kitchen, and enjoy it with a cup of hot tea. Ditch the coffee.
